October is the time for pumpkins. From pumpkin spiced lattes to pumpkin pie, pumpkins thrive during the month of October. We wanted to continue this theme by sharing one of our favorite recipes: pumpkin empanadas. These are perfect pastry for the month of October! 

What You’ll Need

3 cups of all purpose flour

 2 ⅓ cup of white sugar

 1 ½ teaspoon of salt

 ¼ of baking powder,

1 cup of vegetable shortening

 1 cup of warm water

  1 beaten egg.

4 cups of pure pumpkin puree

 2 large eggs

 1 ½ cinnamon 

1 teaspoon of cinnamon 

1 teaspoon of ground ginger

 ½ cloves

 

What To Do

Preheat your oven to 350 and start lining a baking sheet with parchment paper. 

Dough

In a large bowl mix your flour, ⅓ cup of sugar, 1 ½  teaspoon of salt and baking powder together. Add the vegetable shortening and water. Stir in the bow, and begin to knead on a flat surface for 10 minutes. Cut the dough into quarters, then cut quarters into thirds to make 12 equal pieces. Roll each piece into balls, cover, and let rest.

Pumpkin Filling

In a large bowl mix mix the pumpkin, two eggs, 1 cup of sugar, 1 teaspoon of salt, cinnamon, ginger, and cloves. 

Assembling 

On a floured counter roll your dough into a circle and place ⅓ cup of your pumpkin filling. Fold your dough, add fork marks, and coat with egg wash. Now, lay it on your baking sheet and place in the oven for 20 minutes.
